“I was diagnosed with Stage 3 Chronic Kidney Disease at 37. This was a total surprise — and I had no idea what to eat that was actually healthy for my kidneys.”

At 37, I was diagnosed with IgA Nephropathy — a rare immune disease that attacks the kidneys. It meant a kidney biopsy, a Stage 3 chronic kidney disease diagnosis, a new vegetarian diet, and a doctor telling me to watch my sodium.

I was stunned to discover that following a low-sodium diet is nearly impossible if you eat anything that comes in a package. Sodium is everywhere — in chips, salsa, hot sauce, crackers. I started reading every label and felt a kind of grief I didn't expect. I wasn't losing food exactly. I was losing the freedom to eat without thinking about it.

But over a couple of years, I found food that tasted good and was low in sodium — the tortilla chip with real crunch and just 15mg, the seasoning blend that makes Mrs. Dash look like a science experiment. Nobody had done the work of curating it in one place. I couldn't be the only person who needed that. Years of label-reading so you don't have to. That's Unsalted Pantry.
